I love pickles. I mean, I love pickles! The problem is that I’ve grown bored of the pathetic selection at my local grocer. The have two kinds of pickles: dill, and sweet. That’s it. No fun flavors, no extra spices, nothing! When I lived in the city, there was nearly half an isle dedicated to tons of pickles available from small businesses and start-ups that offered a vast array of different pickles to try. I rarely bought the same jar twice…but living in a smaller area yields less variety, and so I got curious. How hard is it to make your own pickles? Most recipes say to leave the cucumber and spices mixture in the fridge for 4 – 5 days. I’m sorry, a whole week of looking at the delicious pickles-to-be and not being able to munch on them? I’ll be honest, I don’t have the kind of self control. Especially when it comes to pickles.
I stumbled across this DIY pickle recipe and it actually looks…easy. And I don’t have to leave it to ferment in the fridge for a week. Excuse me while I buy a thousand cucumbers really quickly!
It’s simple to start with only 4 ingredients: cucumbers, garlic, sea salt, and fresh dill.
The video slices the pickles into quarters, but I’m going to try slices first to really let everything soak in since I don’t have pickling cucumbers available where I live. I’m also going to throw in a spoonful of sugar, some red pepper, and some black pepper. Maybe I’ll add a bit of turmeric and mustard seeds with a dash of vinegar to one batch and see how that goes.
I’m excited to realize that pickling won’t take weeks to finish. I hope these are as delicious as they look!
